Bergen Seafood and Food Guide: Fish Soup, Persetorsk and Skillingsboller

Where to find authentic Bergen fish soup, traditional seafood bistros and the city's famous cinnamon rolls.

Designated a UNESCO Creative City of Gastronomy, Bergen has cooked with the catch of the North Sea and the surrounding fjords for nearly a thousand years. While the open-air stalls at the famous harbour Fish Market (Fisketorget) are picturesque to walk through forking samples of smoked whale, snow crab and caviar, their sit-down grill plates are priced for cruise-ship tourists; walk just one block inside the glass hall of Mathallen or into the cobbled alleys of Vågsbunnen and Nordnes for authentic local flavours and far better value.

Five Bergen Culinary Classics Not to Miss

  1. Bergensk Fiskesuppe (Bergen Fish Soup): unlike tomato-based Mediterranean fish stews, genuine Bergen fish soup has a velvety, sweet-and-sour white broth thickened with sour cream, egg yolk and a splash of vinegar and sugar to balance the richness, filled with chunks of fresh cod and salmon, finely julienned carrots, celeriac, leeks, hand-peeled shrimp and tiny airy fish quenelles (fiskeboller). Try a lunchtime bowl at Søstrene Hagelin (a fish-cake shop operating since 1929 on Strandgaten), Fjellskål inside the glass Mathallen at the Fish Market, or Bryggeloftet & Stuene.
  2. Skillingsboller (Bergen's Giant Cinnamon Rolls): introduced by Hanseatic traders and named because they originally cost one skilling coin, a true Bergen skillingsbolle is rolled tightly into a flat spiral with generous butter and cinnamon and dusted with coarse sugar crystals (never sticky American frosting). Compare warm ones straight from the oven at Baker Brun (at Bryggen), Det Lille Kaffekompaniet (in a tiny wooden house behind the Fløibanen station) or Kafé Spesial / Godt Brød.
  3. Fiskekaker (Warm Hand-Fried Fish Cakes): bought warm in paper wrapping straight over the counter at Søstrene Hagelin to eat on a harbour bench like an apple, or served on a plate with brown gravy, bacon and grated raw carrots.
  4. Persetorsk and Plukkfisk: Bergen's signature heritage dish (with its own dedicated feast day on 28 January) of fresh winter cod fillets pressed overnight under a layer of sugar and salt so the flakes turn pearly white and firm, served with pea purée and egg butter, or comforting mashed cod-and-potato plukkfisk at historic Pingvinen pub in Vågsbunnen.
  5. Trekroneren Reindeer Hotdog: standing at a green street kiosk on Kong Oscars gate near the Fish Market since 1946, serving 250-gram reindeer-and-pork sausages in a toasted bun topped with sweet-tart lingonberry sauce, mustard and crispy fried onions, washed down with a free cup of red berry saft cordial.
