1. How 1862 Swiss Immigrants Created Uruguay's National Cheese (Queso Colonia)

  • The 1862 Agricultural Colony of Nueva Helvecia: Beginning on 25 April 1862, farming families from the Swiss cantons of Bern, Ticino, Lucerne, St Gallen, and Valais (joined by settlers from Alsace, Austria, and western Germany) established the agricultural colony of Nueva Helvecia. Finding lush prairies where cattle had previously been raised only for hides and salted beef, the Swiss settlers built Uruguay's first copper-cauldron dairy cellars (queserías), mechanical grain mills, and first rural tourist hotel (Hotel Suizo, 1872).
  • What Makes Authentic Queso Colonia Special: Adapting traditional Swiss Emmental and Gruyère methods to the rich grass-fed cow's milk and warmer climate of the Río de la Plata, the cheesemakers of Nueva Helvecia created Queso Colonia, today Uruguay's flagship semi-hard table and melting cheese, prized for its pale golden paste, round fermentation "eyes" (ojos), and buttery, lightly sweet nuttiness.

2. What to See & Taste in Nueva Helvecia and Neighboring Colonia Valdense

  • Touring Family Queserías & Fondue Restaurants: Along the approach roads and inside town, family-owned dairy shops and farms welcome visitors to sample aged Queso Colonia, Swiss-style Gruyère, Dambo, Sbrinz, and Cuartirolo alongside homemade berry jams and thick farmstead dulce de leche, while traditional chalet restaurants serve bubbling Swiss cheese fondue and raclette.
  • Plaza de los Fundadores, the 26 Cantonal Shields & Molino Quemado (1875): Stroll through Plaza de los Fundadores to see the monument by sculptor Aristide Bassi, the painted wooden coats of arms of all 26 Swiss cantons adorning lamp posts and chalets, the Santuario de Schoenstatt, and the atmospheric stone-and-brick ruins of the 1875 Molino Quemado watermill on the banks of the Arroyo Rosario, before stopping ten minutes away in Waldensian-founded Colonia Valdense (1858).
