Aegean Meze, Wild Greens (Otlar) and Seafood Dining in Izmir
Decoding an Aegean meze tray of wild herbs, olive-oil dishes and charcoal-grilled fish along the bay.
In Izmir and across the surrounding Aegean coast, meat takes a back seat to zeytinyağlılar (dishes cooked gently in extra-virgin olive oil and served at room temperature), wild spring herbs foraged from the hills (Ege otları), and fresh fish caught in the waters between Karaburun, Foça and Chios. Whether you sit at a white-tablecloth fish restaurant along the Kordon or Bostanlı, or queue at a midday steam-tray esnaf lokantası (tradesmen's canteen) inside Kemeraltı, knowing these regional specialities unlocks the menu.
Six Aegean Herbs & Olive-Oil Meze to Order First
At any Izmir tavern (meyhane or balıkçı), you do not order starter courses from a paper menu; the waiter brings a large chilled glass tray to your table or invites you up to the refrigerated glass display counter to point at 4 or 5 small shared plates:
- Deniz Börülcesi (Glasswort / Samphire): lively green succulent sea-asparagus blanched briefly so it stays crisp, stripped from its woody stems and dressed solely with crushed garlic, lemon juice and fruity Aegean olive oil.
- Kabak Çiçeği Dolması (Stuffed Courgette Blossoms): delicate orange morning courgette flowers picked at dawn before the petals close, stuffed with aromatic rice, pine nuts, currants, dill and mint, and simmered in olive oil.
- Şevketi Bostan (Blessed Thistle): the prized winter and spring root-and-leaf herb of Izmir, braised in a velvety lemon-and-olive-oil sauce (or slow-cooked with tender cubes of lamb at midday lokantas).
- Enginar (Urla Sakız Artichokes): from March through June, meaty heirloom artichokes from the Urla peninsula braised in olive oil with baby broad beans (iç bakla), peas and fresh dill.
- Girit Ezmesi and Fava: Cretan-style whipped cheese pounded with roasted pistachios, walnuts, basil and garlic olive oil (Girit ezmesi), alongside silky yellow split-pea purée topped with red onion and dill (fava).
- Radika, Cibez and Arapsaçı: dandelion greens, wild cabbage shoots and wild fennel dressed warm or cold with lemon and olive oil.
Choosing Your Fish and Midday Esnaf Lokantası Classics
After your cold meze and a warm intermediate starter (ara sıcak) of charcoal-grilled octopus leg (ahtapot ızgara) or crispy butter-fried calamari, walk to the fish counter to select whole charcoal-grilled Çipura (gilt-head sea bream), Levrek (sea bass) or sweet red Barbun (red mullet). At lunchtime inside Kemeraltı Bazaar (at institutions like Bizim Lokanta, Doyuran or Ayşa Boşnak Börekçisi), order İzmir Köfte (oblong meatballs baked with potato wedges, green peppers and tomato sauce) and Bosnian hand-rolled flaky börek.
