What to Eat in Georgetown: Pepperpot, Cook-Up Rice, Seven Curry and Demerara Rum
Taste the signature dishes of Georgetown, from Indigenous-inspired cassava pepperpot and coconut cook-up rice to Indo-Guyanese Seven Curry on a water-lily leaf, pine tarts, and Demerara rum.
Known locally as the Land of Six Peoples, Guyana brings together Indigenous Amerindian, African, East Indian, Portuguese, Chinese, and British culinary traditions in a single kitchen. In Georgetown, you can taste slow-simmered Amazonian cassava reductions, flaky Caribbean rotis, fiery scotch bonnet and wiri-wiri pepper sauces, and world-famous Demerara rums within a few blocks of Main Street and Bourda Market.

Guyanese Pepperpot and Cook-Up Rice: The Two National Classics
Guyana's undisputed national dish is Pepperpot, an Amerindian (Arawak and Carib) heritage stew in which beef, pork, and cowheel are simmered for hours in cassareep (a thick, glossy black reduction boiled down from the juice of grated bitter cassava root, which acts as a natural preservative and gives the sauce a bittersweet, caramelised depth) alongside cinnamon bark, cloves, brown sugar, and aromatic wiri-wiri chillies. While families traditionally serve Pepperpot on Christmas morning with dense rounds of homemade plaited bread to soak up the gravy, Georgetown's Creole restaurants prepare it year-round.
Sharing top billing is Afro-Guyanese Cook-Up Rice, a fragrant one-pot meal of white or parboiled rice, black-eyed peas or pigeon peas, salted beef, pig tails, or chicken simmered slowly in freshly squeezed coconut milk with fine thyme, garlic, and whole green wiri-wiri peppers, accompanied by fried ripe plantains and homemade mango sour.

Indo-Guyanese Curry, Dhal Puri Roti, and Water-Lily Seven Curry
Descendants of nineteenth-century indentured labourers from Uttar Pradesh, Bihar, and South India shaped Georgetown's everyday lunch culture. Across the city, snackettes and curry houses roll paper-thin dhal puri roti (stuffed with seasoned ground yellow split peas) and flaky hand-clapped oil roti (paratha) to scoop up rich duck curry, goat curry, or gilbaka (river catfish) curry seasoned with roasted Guyanese garam massala and geera (cumin).
The most celebrated vegetarian feast is Seven Curry, traditionally served at Hindu weddings and festivals on a broad green leaf of the giant Victoria amazonica water lily: steamed rice and yellow dhal surrounded by seven distinct vegetable curries including pumpkin, katahar (young breadnut), baigan (aubergine), channa and potato, eddo, calaloo (spinach), and sweet-and-spicy green mango sour.

Bakeries, Egg Balls, and El Dorado Demerara Rum
- Egg Balls, Cassava Balls, and Pine Tarts: At morning bakeries and snackettes on Robb and Regent Streets, order warm egg balls (hard-boiled eggs encased in seasoned mashed cassava, breaded and fried golden, and drizzled with fiery yellow mango sour), triangular shortcrust pine tarts filled with spiced pineapple jam, red-swirled coconut salara rolls, and cheese rolls.
- Demerara Rum and Mauby: Along the East Bank of the Demerara River, Demerara Distillers Limited (DDL) operates the last surviving eighteenth- and nineteenth-century wooden pot and continuous stills on earth, including the 1732 Port Mourant double wooden pot still, the Versailles single wooden pot still, and the 1880 Enmore wooden Coffey still, which produce the rich, smoky-sweet spirits blended into aged El Dorado rums. For a non-alcoholic cooler, try iced mauby brewed from buckthorn tree bark with aniseed and cloves.
