What to Eat in Şanlıurfa: Dawn Liver Skewers (Ciğer), Kebabs, Çiğ Köfte and Sıra Gecesi

Mastering Urfa's smoky charcoal grills, from breakfast lamb liver skewers to an evening Sıra Gecesi folk feast.

In Şanlıurfa, the aroma of oak charcoal, toasted lamb tail fat and smoky isot pepper hangs over the streets from early in the morning before dawn. Note one famous distinction before you sit down: outside the region, people think "Urfa Kebab" means the mild version and "Adana Kebab" means the spicy version, in reality, while the minced-meat skewer called Urfa Kebabı is indeed seasoned subtly without red chilli, the fresh roasted green and red Urfa peppers, raw onions and isot flakes served beside it on the table pack serious heat.

Five Essential Urfa Dishes to Order

  1. Urfa Ciğer Kebabı: unlike Diyarbakır's larger liver cubes, in Urfa fresh morning lamb liver is cut into tiny pea-sized cubes (kuşbaşıdan küçük) and threaded onto thin iron skewers so it sears over intense charcoal in just 90 seconds, staying tender and juicy inside.
  2. Patlıcanlı Kebap & Haşhaş Kebabı: long, sweet Birecik aubergines sliced into thick discs and alternated on a wide flat skewer with balls of hand-minced lamb, cooked over dying embers until the aubergine turns as soft as butter (always eaten with your hands wrapped in flatbread at historic spots like Gülbaba, Sembol or Dedecan).
  3. Urfa Çiğ Köftesi & Ağzı Açık / Ağzı Yumuk: in its birthplace, fine bulgur is kneaded by hand on a ribbed copper tray with ice, tomato-and-pepper paste, isot and twenty spices, wrapped in crisp romaine lettuce with pomegranate molasses. Pair it with ağzı açık, crisp fluted rounds of dough with an open top of spiced minced meat fried in clarified butter.
  4. Şıllık Tatlısı & Billuriye: thin, delicate crêpe-like pancakes layered with generous amounts of crushed walnuts, drenched in hot clarified sheep's butter and light sugar syrup, and topped with green pistachios (şıllık).

How to Experience an Authentic "Sıra Gecesi"

Historically, a Sıra Gecesi was a winter fraternity gathering where groups of friends took turns hosting each other in the vaulted stone guest room (divan odası) of a mansion to discuss ethics, sing classical gazel and hoyrat folk songs, and knead çiğ köfte together. Today, restored historic stone mansions around Balıklıgöl and Eyyübiye (such as Cevahir Han, Gülizar Konukevi, Şurkav or Elçi Konağı) stage evening Sıra Gecesi dinners, book your seat a day ahead.
